The bulldogs were bred to heard cattle, more specifically – bulls.
The calves get a ring put in their noses. The bulldog is supposed to jump up and catch the ring in its mouth and hold on. If you get the bull by the ring you get him to do anything.
However, the dogs with a straight snouts could couldn’t hold the ring long because they couldn’t breeze. The flat nose lets the dog breeze while holding the ring in its mouth. Hence the name bulldog.
