In an interview, Jerry said that they rehearse it in front of a live audience, and use the laughter for the taping.

A combination was used during the taping of SEINFELD. Jerry’s apartment and the restaurant were studio set and usually filmed in front of a live audience when possible. However, most of the show used a laugh track. All scenes filmed on the New York streets (which was actually the outside Brownstone Street backlot at Universal Studios in California) could not accommodate a live audience.
