•Before you go anywhere near the microwave, make sure to measure out the rice and water in the correct ratio. Here’s how : First measure out the number of cups of rice you need. In this article (for two adults and one small kid), I use 2 cups of rice. The type rice used in this article is basmati (long grain) rice, but can also be applied to spanish or parboiled rice. •2 Put the measured rice into a large glass or other microwave safe bowl so that the rice fills the bowl upto halfway or less. If the rice fills the bowl more than halfway, then the cooked rice will overflow in the microwave(since rice expands while cooking) •3 Now for the water. It is important to get the amount of water correct to be successful with the microwave since it differs from stove top cooking. For two cups of rice measured above, measure out THREE and 1/2 cups of water and add to the rice. The way it works is this : 1 cup rice -> add 1 3/4 cups water 2 cups rice -> add 3 1/2 cups water 3 cups rice -> add 5 1/4 cups water Any more than this and you’re probably better off cooking on the stove (see other article) In other words, the multiplication factor for the water is 1.75 times the amount of rice. •4 Now cover the bowl of rice and water with an oven safe plate or microwave safe cover and place in the microwave. Add salt/seasoning if desired. NOTE : make sure the lid is not airtight because steam will be released in the microwave cooking process. •5 Set the microwave to cook on HIGH for 12 mins to cook the TWO cups of rice presented in this article. NOTE : For other measurements of rice, you can calculate how much more or less time you’ll need. NOTE : this article uses an 1100W microwave. You can easily calculate the amount of time you’ll need by using the wattage information of your own microwave. •6 Now here’s where the IMPORTANT bit comes in ! Once the microwave has done its job, do NOT be tempted to open up the cover and see – there is still more cooking to be done !! Leave the rice to sit on its own (still covered) in the microwave (with the oven switched off), cooking in the residual steam produced while cooking. For the two cups of rice cooked in this article, I left the rice in the microwave (switched off) for at least 30 mins AFTER the original 12 mins of cooking on high. IF you open the cover to take a ᴘᴇᴇk, you’ll lose all the steam and the rice won’t cook any further. The good thing is that you can leave the rice in there for as long as you want and it will quietly cook on its own while you get the other stuff going in the kitchen !! •7 After about 30mins (12mins on high + 30 mins on OFF = 42mins)your rice is ready, fluffy, perfect, hot and ready to be served !! •8 NOTE : If you’re in a hurry and want the rice cooked faster, then after STEP 5, simply add a few tablespoons of water to the rice, set the microwave power to LOW and cook another 5-6 mins. In this case you may have to check to make sure that the rice has been fully cooked.
